Default Looking for a Fig Pie Recipe

Though I've never eaten one, I would like to know if anyone on here has eaten fig pie and would you have a good recipe for one? Thanks a bunch!

My cousin brought one to a family gathering. She had gotten the recipe off the internet. She has a huge fig tree in her back yard and is always looking for a new way to prepare them.
I have not yet made this recipe, only eaten hers but was very good.

FRESH FIG PIE
5 c. peeled figs, cut in half
1 tbsp. cornstarch
7 tbsp. sugar
Juice of 1/2 lemon
6 tbsp. butter
10 inch lattice-top pastry
1 tsp. cinnamon or apple spice
Select figs that are ripe and firm. Cut in half. Place figs in an unbaked 10 inch pastry shell.
Combine cornstarch, sugar and spice; sprinkle over figs. Add lemon juice and dot with butter.

Form lattice top with strips of pastry. Bake in a 425 degree oven for 30 to 40 minutes or until brown.

Here is a couple recipes

Cajun Fig and Pecan Pie

Ingredients :

1xNine-inch uncooked pie shell 1/2cupChopped fig preserves 1cupChopped pecans 1/2cupSugar 1tblCorn starch 1tspVanilla 3xEggs 1cupWhite Karo syrup

Method :
  • Here is a recipe from The Encyclopedia of Cajun & Creole Cuisine I grew up in Baton Rouge and my mother still lives there. She keeps me supplied with
  • In a mixing bowl, mix corn starch and sugar. Add syrup, vanilla and eggs - blend well. Add pecans and figs. Pour mixture into pie shell. Bake at 300 degrees approximately 45 minutes.

Fresh Fig Pie

Ingredients :

Pastry for 9" lattice-top Pie 3/4cupLight brown sugar 1/4tspGround ginger 3cupPeeled, sliced fresh figs 3tblLemon juice 2tblUnsalted butter 1tblSugar

Method :
  • Preheat the oven to 425. Prepare the pie pastry. Line the pie pan with the bottom crust, using half of the dough. Keep the remaining dough chilled. Combine the brown sugar and ginger. Stir in the figs, and lemon juice. Mix well. Turn the filling into the crust and dot with butter. Roll out, cut, and lay on the lattice strips. Sprinkle 1 tablespoon sugar over the lattice crust. Bake 30 minutes or until golden brown.
