Just playing around in the kitchen tonight. Had a couple of portobello mushrooms. Decided to try a portobello no crust pizza.
Just covered the inside of the shroom cap with mozzarella cheese, pepperoni, a few olives. Popped it into the oven at 350 for about a half hour. Topped with a little parmesan cheese and good to go.
Came out pretty good.
Next time I'll probably bake the 'shroom for about 20 minutes prior to placing the toppings then place it back in the oven to finish up. The portobello was a little more firm than I like it.
This could also be done easily on the grill.
