In a medium bowl, beat the eggs, sugar and salt.

I make my pain perdu like CCroteau but without salt and always with Steen's syrup and butter, no powdered sugar. Never thought about using nutmeg, cinnamon and vanilla, but it sounds great. I love nutmeg and cinnamon sprinkled on a cup of hot tea and also coffee. May try the pain perdu this weekend. Thanks.

Oh my goodness. My kids love French toast, which I have always made with wheat bread, but I recently made the REAL LOST BREAD with stale French bread and my kids thought they had died and gone to breakfast heaven! I also use the vanilla extract and cinnamon.

I sprinkle the cinnamon on top of the egg mixture BEFORE I coat each slice of bread. It makes a nice brown swirl pattern on the bread.
